Composition: 64% Merlot, 17% Cabernet Franc, 10% Petit Verdot, 10% Tannat
Winemaker Note: The 2015 Elevation was made for our members, and our goal was to make a wine that is distinct from the rest of our wines. While Eluvium and Novum seek to highlight Merlot and Cabernet Franc respectively, the Elevation uses the grape varieties in both wines and seeks to highlight the nuance and breadth that is possible in a blend. WIth only 133 cases produced, this will be sold primarily to our member club.
Wine description: On the nose the fruits are darker with plum and cooked black cherry, accentuated by cola, bergamot, black tea and mint. On the palate the flavors echo the aromas, and the wine is dense with full tannins, allowing for a lingering mouthfeel. In 2017, it is showing its youth and will no doubt soften as it ages in the bottle.
Food pairing: Given its body, it will go with a variety of food ranging from garlicky seafood to heavier foods like smoked meats and spicy fried potatoes.
