2016 Vidal Young Wine
So ... we serendipitously got some Vidal from a winegrower friend, and found ourselves wondering what to do with it. Ultimately we decided to play “what if?” What if we give this grape the kind of respect that is usually reserved for vitis vinifera? We did a gentle whole-cluster press, natural settling, and left the fermentation to the ambient yeasts - the same treatment we give to our best whites. As it fermented slowly (ambient yeasts take their time), we realized there was an opportunity to try something different. We have no precedent or expectation for the grape at Early Mountain, and we could have fun with it. We played around with Petit Manseng and bottled with the idea of immediate consumption.
Now we have a wine that we’re definitely going to make again. Because we’re proud we took the grape seriously. Because it’s imminently affordable. Because it’s fun.
