Blend: 59% Chardonnay, 41% Pinot Gris
Winemaker Note: “Pur” is French for “pure”, with this wine so named due to its majority influence of stainless steel fermentation. Historically, we have opted for barrel fermentation, but the 2020 vintage allowed us to leave a small portion of a Chardonnay and Pinot Gris for coferment and fermentation in stainless steel. Notably, the winemaking for this and barrel-fermented Chardonnay remain very similar, we prefer to ferment warmer, allowing simple fruity aromas to dissipate and amplify more savory and mineral-driven attributes. Additionally, this wine also sees extended lees management while in tank, thereby encouraging a richer textured palate. With the 2020 vintage, we embrace the acidity and freshness Chardonnay and Pinot Gris.
