I always like to joke that Petit Verdot is a bit much. It has a lot of tannin, color, and can present as monolithic, not always as nuanced as many other varieties. We often look to use small percentages of whole cluster inclusion in our red wines to add to the aromatic diversity, but in the case of the pet nat, we went 100% whole cluster, moving this wine into a very aromatic place. It leads with dense dark fruit of fig and boysenberry, offering an earthy mushroom character, brightened by a secondary note of grapefruit and mandarin orange.
