This is a lighter bodied sparkling wine, driven by its limited lees contact in bottle and brightened further by a zero dosage addition.

Winemaker Notes
This is our second release of méthode traditionnelle sparkling rosé sparkling. The majority of this base comes from 2020, focusing on Cabernet Franc and highlighted by Merlot. In 2020 our Merlot rosé had such notable acid, we were excited to use a small portion to complement the traditionally Cabernet Franc base. The base is fermented in 95% stainless and 5% in neutral oak and as with many traditional sparkling wines, the base is non-vintage, which allows us to blend in some wine intentionally held back from previous vintages, which sees further aging in barrel. Once bottled, This wine spends one year on lees, just enough time to see the very start of autolytic character development, but maintaining bright, fresh primary aromas. This wine is intended to be the brightest and freshest méthode traditionnelle sparkling wine we make.
Vineyard Notes
A cool summer made for high acidities heading into the sparkling wine harvest season and dry weather at the end of August made for ideal picking conditions.
Food Pairing Notes
Pair with raw fish flavored with citrus and herbs. An amazing pairing with cheeses, especially fresh, soft rind and young goat cheese. With dessert, try fruit cobblers or citrus confections. A great summer sparkler that works with a variety of fresher fare.
