Holiday Cookie Recipe
From the Early Mountain kitchen: molasses–gingerbread cookies (a house favorite) that pair beautifully with Petit Manseng and Brut Rosé NV.
Chef Tim's Molasses Gingerbread Cookies
- 2 1/4 cups flour
- 2 tsp ground ginger
- 1 tsp cinnamon
- 1/2 tsp cloves, 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/2 cup molasses
- 1 egg
- Cream butter and sugar; whisk in molasses and egg.
- Combine dry ingredients; fold into wet until just mixed.
- Chill 30–60 minutes. Roll into balls, coat with sugar.
- Bake at 350°F (175°C) for 8–10 minutes until set.
Pairs beautifully with Petit Manseng or Brut Rosé NV.
